Almond Joy popsicles are a yummy combination of chocolate, almond and coconut. This creamy and smooth chocolate and the crunch of the almond brings you everything you love about an Almond Joy!

The almond Joy is an often underrated candy bar. I must admit though, that it is one of my favorites. I’m a sucker for all things chocolate and coconut is one of my favorite elements to any dessert. So, naturally I love chocolate and coconut together in this Almond Joy popsicle.
I played around with the idea of adding almond butter to these popsicles but I knew I would miss the crunch of the almond. After all, that is one of the defining features of an Almond Joy! So, I kept it simple and just decided to put chopped up almonds in it instead.
What You Need to Make These

- Popsicle Mold. I use this silicone popsicle mold that I got off of Amazon. I have loved it and it has made getting the frozen popsicle out of the mold a breeze!
- Popsicle sticks. I have reusable popsicle sticks but I often make so many that I end up needing to use wooden popsicle sticks as well.
- Blender – I use this one.
- Canned Coconut Milk – Make sure you are using the canned coconut milk and not a carton. You want the creaminess from the canned variety.
- Cocoa Powder
- Honey/sweetener of your choice. – I like to skip sugar and sweeteners as often as possible. With fruit popsicles it is easier but I found that the chocolate recipes really need something to offset the bitterness of the chocolate.
- Almonds – I use whole, raw almonds. If you’re looking for a smoother consistency; you could also use almond butter.
- Coconut extract – Just to give it that extra coconut kick.
How to Make Almond Joy Popsicles
- Add coconut milk, honey and cocoa powder to a medium sauce pan. Heat on medium heat and mix until fully incorporated and no clumps remain.
- Pulse almonds in food processor until almonds are finely chopped
- Add chocolate mixture, almonds and the rest of the ingredients to the blender and blend until all ingredients are incorporated.
- Pour mixture into poopsicle mold
- Add lid (if your mold has one), popsicle sticks and freeze for 4-6 hours until solid. Store in a freezer bag/container.

Almond Joy Popsicles

These Almond Joy Popsicles are filled with chocolate, coconut milk and almonds for a delicious summer treat!
Ingredients
- 1 13.5 oz canned coconut milk
- 1/4 cup cocoa powder
- 1-2 Tbs honey
- 1/2 cup raw almonds
- 1/4 tsp coconut extract
- 1-2 tsp super sweet (or sweetener of choice)*
Instructions
- In a small saucepan add coconut milk, cocoa powder and honey. Heat on medium heat and mix together until well incorporated.
- Pulse almonds in a food processor until finely chopped.
- Add chocolate mixture, almonds and remaining ingredients to blend. Blend together until fully mixed.
- Pour mixture into popsicle mold being sure not to overfill them.
- Add lid, if using, and popsicle sticks.
- Freeze for 4-6 hours until frozen solid. Store in freezer bag/container.
Notes
- You can add your favorite sweetener to this. I feel like some extra sweetness helps offset the bitterness of the chocolate. I use Trim Healthy Mama's Super Sweet which is a stevia and erythritol mixture. You could add more honey or sugar if you prefer.
- If you aren't using a silicone popsicle mold; it can be helpful to run warm water over the mold to help release the frozen popsicles.
