This is one of those recipes that can just be thrown together. I love recipes like this because every time it comes out a little different and you get to play around with extra ingredients or different spices.
I enjoyed creating this recipe on the fly and I hope you enjoy watching me create dinner for my family in a very relaxed way.
We’ve all heard of breakfast for dinner, but we don’t often think of skillet meals like this. I’m happy to report that my whole family enjoyed this meal! I was told that it would be good with a side of potatoes. That’s, of course, what I was thinking too! So, next time I whip up this recipe I will be adding that to the meal.
What is “Brinner”
“Brinner” is a common term for “Breakfast for dinner”. So, instead of having pancakes and bacon in the morning you would have it in the evening for dinner. In this case we are having meat, eggs and gravy (and potatoes next time!)
What You Need for This Breakfast Skillet Dinner
- Ground meat – I use venison.
- Butter – or oil of your choice. I used bacon grease for this recipe. It certainly adds to the theme of “breakfast”
- Flour
- Milk
- Pepper and Onions
- Eggs
- Seasonings
- Cheese – I use fiesta blend but you can use your preffered cheese.
- Skillet
- Saucepan
- Mixing utensils

Steps
- Brown Meat in a skillet over medium heat.
- Melt butter or oil in a saucepan. Add flour and whisk together for a few minutes.
- Slowly add milk while continuously whisking. Add seasonings and whisk together until thickened. If your gravy is a little thick you can add more milk. Remove from heat and set aside.
- Once your meat is cooked through, remove from skillet and set aside.
- Melt butter or oil in skillet and add onion and peppers. Cook until softened.
- In a small bowl, mix together eggs and milk.
- Add eggs to skillet and scramble eggs in with pepper and onions.
- Once eggs are cooked, stir in browed meat and gravy mixture and let cook for 3-5 minutes.
- Remove from heat, add cheese and cover with lid until cheese is melted.
- Serve immediately.

Breakfast Skillet Dinner

This Breakfast Skillet Dinner is a quick meal to whip up on a busy but relaxing day. Your whole family will enjoy this dinner that will remind them of everything they love about breakfast!
Ingredients
- 1 lbs Ground Meat - Venison or meat of choice
- 4 Tbs butter or oil - divided
- 3 Tbs Flour
- 4 1/2 cups milk - divided
- 1 tsp salt
- 1 tsp pepper
- 1 tsp paprika
- 6 eggs
- 1/2 bag 22 oz frozen 3 pepper and onion mix
- 1 cup shredded cheese - fiesta blend or cheese of choice
Instructions
- Brown meat in skillet over medium heat.
- While meat is browning; melt 3 Tbs butter or oil in sauce pan over medium heat. Add flour, mix and cook for 3 minutes. Slowly add 4 cups milk while whisking. Add Salt, pepper and paprika and continue mixing until thicken. If it is too thick you can add a little more milk. Remove from heat and set aside.
- Once the meat is browned. Remove for skillet and set aside. Add remaining 1 Tbs butter or oil to skillet. Add Pepper and onion mix and cook until softened.
- In a small bowl whisk together eggs and remaining milk. Add eggs to skillet and cook stirring occasionally until fully cooked.
- Add gravy to the egg mixture and let cook for 3-5 minutes.
- Remove from heat, sprinkle cheese on top and cover with a lid until cheese is melted.
- Serve immediately
Notes
- You can use your preffered oil. I used bacon grease in this recipe but if I didn't have that I would probably use butter.
- The frozen mixed pepper and onion mixture can be substitute for 1 onion and 1 bell pepper.
